Oh my! While being extremely careful, I still managed to cut a finger! This is a sharp knife!I would consider this more a boning knife than a filet knife, due to the stiffness of the blade. Which is exactly what I wanted. Very well made, razor sharp, and well balanced! I needed this to trim beef brisket in particular. I have a number of German and Swiss knives. I’ve found the Japanese carbon steel to be far superior to any of them. I have an eight inch chef’s knife and this boning/filet knife. I’ve been able to find both at more reasonable prices on Amazon, and I am very happy with both knife purchases. I also found a great deal on a blade sharpener/honer, which has sharpened my other knives beautifully! Amazon products are always easy to research! I’ve been extremely happy with my knife orders, especially the quality for the price!I highly recommend this knife!P. S.Amazon also has really good cut resistant gloves! I should have worn them to open the package!

Best filet knife I’ve ever used! It cut the tenderloin into paper thin slices for lettuce wraps. My husband asked for this knife to filet fish and he says it was so easy to use and cuts cleanly without damaging the fish. It has just enough flexibility without sacrificing strength.And the blade sharpness is a delight! The wood handle is beautiful and fits our hands just right.

Razor sharp, and the ergonomics of it are *perfect*. The box is nice and thin too so it’s easy to put away. Perfect size for breaking down whole chickens.

Fantastic knife straight out of the box. Cuts beautifully and makes trimming meat a pleasure. Simply a well made, purpose built tool. So far it has held it's edge nicely. Time will tell on that front, but so far, so good. I've had it a few months.This knife is not cheap, but it is by no means the spendiest knife out there. Again, buying in the middle has saved me money with no perceivable loss of function.

The knife is extremely sharp and very comfortable to hold. Also feels like its meant to last. The handle is nice and sturdy, all in all very easy to use

Great knife. Comes super sharp. Finish exceptional. The shape and heft of handle fits well in my hand in use. The appearance of the Pakkawood (I think) looks nice. I have oil rubbed the handle which brings out a luster and likely will keep it looking nicer longer. Cuts well and I use on much more than just filleting.
